As I am starting my vegetarian diet, I want to replace the desire for meat. I got Tofurky to replicate my deli meats, and I also added microgreens to my wraps to make them more nutritious. Microgreens are a great way to add more nutrition as they are rich in potassium, iron, zinc, magnesium, and copper (2, 3 ). Today we are making one of my favorite wraps, just vegetarian style. It takes about 10 minutes of your time paired with fruit for a more balanced meal. 


Lunch Recipe | Dietary restrictions: Vegetarian 

Prep Time: 5 minutes | Cook time: 3 minutes | Total Time: 8 minutes 


Ingredients: 

  • Tomatoes 
  • Garden Spinach Herb tortilla
  • Organic little gem Lettuce
  • Mirco Greens [Mirco Broccoli]
  • Colby and Monterey mixed blend cheese
  • Provolone Cheese
  • Tofurky Plant-Based Deli Slices Hickory Smoked
  • Grapes [or fruit of your choosing] 
  • Dressing 

Instructions:


  1. Heat your Spinach tortilla or (giant tortilla of your choice), and add your Provolone and the mixed cheese blend (or cheese of your choice) for it to melt. 
  2. Heat the Tofurkey deli slice until it's warmed (if preferred), then add on top. Turn off the stove and transfer on to a plate. 
  3. Dice your tomatoes and add them to your wrap and your preferred microgreens. 
  4. Add your lettuce, then close in the sides and close it to a wrap. Slice your wrap, and add your favorite dressing to the side. 
  5. Add fruit as your side dish.
